California Table Grapes Commission Recipe Challenge- Grape Muffin Recipe



A few other bloggers and I were chosen to go spatula to spatula in a recipe challenge using grapes as the main ingredient of the recipe and using at least 2 other ingredients for the California Table Grape Commission. We enjoy grapes at our house. Green, red, black- we love them all. We enjoy them right out of the fridge and I also like them frozen. Did you know the majority (98%) of the grapes sold in the US come from California? Have you ever had a grape muffin? My boys love cupcakes and muffins. You usually see blueberry and other fruits as the flavored ingredient in most muffin recipes. I decided that grapes are just as special as the other fruits but they get less attention when it comes to muffins.

"Grape Muffin recipe"

California Table Grapes Grape Muffin recipe

Ingredients:
2 & 1/2 cups flour
1 cup sugar
2 & 1/2 Tsp. baking powder
1 cup milk
1 Tsp. Vanilla extract
2 eggs (well beaten)
1/2 cup butter, melted
1 & 1/2 cups California seedless grapes, cut up

Directions
Preheat oven to 375 degrees. Line 12 muffin cups with cupcake/muffin cup papers. In a large owl, combine the flour, sugar and baking powder. Make a well (hole in the center of the ingredients in the bowl). Add the milk, beaten eggs, butter and vanilla extract in the well of the dry ingredients. Stir until all ingredients (except the grapes) are well combined.

Gently add in grape pieces and mix easily. Fill each muffin cup paper 2/3-1/2 full with the muffin mix. Bake muffins in the preheated oven for 25 minutes or until golden brown and a toothpick inserted in the center of the muffins comes out clean. Let cool in pan then enjoy.
