It’s summer time and who thinks lemonade when it’s so hot outside? Are you a pink lemonade fan? Take that a step farther and have you ever had a pink lemonade cupcake? I love these. They are summer time in a cupcake wrapper. I have seen many different takes on the pink lemonade cupcake. I’ve seen recipes that use lemon cake mix, frozen lemonade, lemonade powder and Kool-Aid mix. I am partial to the Kool-Aid mix idea myself but to each their own right?
Pink Lemonade Cupcake recipe
Ingredients: (makes 24 cupcakes)
1 box white cake mix
egg whites or whole eggs (per cake box instructions)
vegetable oil (per cake box instructions)
water (per cake box instructions)
1 pack of Pink Lemonade Kool-Aid mix
Can of store bought Lemon flavored frosting/icing
cupcake liner papers (need at least 24 papers)
Lemon Head candies (optional)
Preheat oven to 350 degrees. In a large mixing bowl, combine cake mix, egg whites, oil and water and mix with an electric mixer. Once all combined add in the packet of Pink Lemonade Kool-Aid mix and blend again until well mixed and cake batter is all pink.
Line muffin tin or pan with cupcake papers and fill each 2/3 with cake batter. Bake at 350 degrees for 15-20 minutes until cupcakes do not look wet on top and a toothpick inserted in the middle of the cupcakes comes out clean. Allow cupcakes to cool completely before attempting to put frosting on top of them. Fill a icing bag or zippered sandwich bag with the frosting and pipe on to the cupcakes. I have used both methods before when I ran out of icing bags once. To use the sandwich bag, fill half way with icing and cut a small corner off the bag and instant piping bag. You can add the lemon head candy on top of the frosting to each cupcake. I have also used pink and yellow sugar or chocolate candy dots and the lemon wedge candies. You can also get cutesy and add a flexible straw cut off to make it look like you can drink it in the middle of each cupcake. Enjoy the rest of your summer!
